Chicken/Turkey Noodle Soup

Wash the bird carcass to remove anything on the inside of the bird such as a little dressing, etc.  Break up to fit in the pan.  Can put in leg or wing bones.  Good if there is a little meat left on.  Cover with water.  Add salt, pepper, onion, stalk of celery, some parsley flakes, and bay leaf.  Simmer for about 2 hours.  Strain the broth of the onion, celery, bones, and meat.  Let cook so you can take off any meat on the bones to add back to the soup.  Meanwhile, put in the noodles and cook them.
To serve, boil potatoes and cut into fairly large chunks.  Put the potatoes in a bowl and break them up with your fork and then put soup over them.
